Hi, I have an old Mac Mini (early 2006). The RAM and processor is outdated (512MB RAM and Intel Core Solo 1.5ghz) and I want to update them. (Can't play 2 tracks in Garageband w/o too many instruments message and can't play 1080p youtube videos).

According to Apples support page, it says the most RAM my computer can handle is 2 GB. Also it says this: "For best performance, use two SO-DIMMs (one in each slot) of the same DIMM size (example: two 512 MB SO-DIMMs)." Does that mean I should get two 2GB SO-DIMMs or get two 1GB SO-DIMMs? Would an Apple store install these?

For upgrading the processor, I couldn't find anything about it. Theoretically, could I buy this and have an Apple store install it? http://www.ebay.com/itm/Intel-Core-Duo-Processor-T2600-2-16-GHz-2M-667-SL8VN-/140628153183#ht_2024wt_1189

    Thank you.

Get two 1Gb sticks. The Apple Store should be able to install them for you. The linked CPU upgrade is the 2nd most powerful upgrade for your Mini. The Apple Store will not upgrade the CPU.
