Assuming you have an iMac model that "allows" Mojave, you can use Mojave "safely" for a few more years, as Apple should provide Security Updates for that OS. Not sure, though, about how many "applicable" third party apps will continue to provide needed security updates.

I suspect that memory prices will come down, so upgrading the memory could be both beneficial and cheap. But just as important is for you to make the needed effort to keep your machine "lean, mean, and clean". That would definitely be a real benefit.

you probably will lose more than you gain by switching to catalina.
I upgraded (actually did a fresh, clean installation) to Catalina from Mojave on both of my Macs, and except for a couple of 32 bit apps, I did not lose anything. For those 32 bit apps, though, I either already had a replacement, or found one. And about 99.9% of the time, Catalina is fine.

What Mac do you have?
What year was it made?
What version of the OS is on it now?

According to this:

High Sierra, OS 10.13.6, is the latest version of the Mac OS that is supported on late 2009 models.
Its not offering any upgrade! My question is can I get the latest OS on this/maybe upgrade the chip and memory?

"Its not offering any upgrade! My question is can I get the latest OS on this/maybe upgrade the chip and memory?"

It's reached a point where it's fully "deprecated" -- no further upgrades possible (at least not without some work).

My opinion -- not worth the money to upgrade "chip and memory", nor the internal drive, as well.
11 years old is getting close to "all you're gonna get out of it".

Time to start shopping for something new or at least "newer".

I'd be looking at Apple-refurbished 2017 27" iMacs, a good value.
Get 8gb of RAM.
Get an SSD -- either 512gb or 256gb (easy to add more external storage via USB3).

Hi what sort of cost would that be? And how easy to transfer all my music etc over? If i did upgrade my existing one any idea of cost?

You are asking how long is a piece of string.

If you are in the US go to Apple Refurbished and OWC for late model iMacs.

Agree that you're better off buying a replacement iMac rather than attempting to upgrade memory or processor

You haven't said how much disk space you've used for all your music. So, I can't estimate how much space you'll need in the new one. But, you have two options - get one with a small SSD and then buy an external hard drive to hold your music, or buy a Fusion model and copy over your existing setups. There is a migration assistant that will help you transfer from old to new - how long that takes depends on how much there is to transfer and how the two computers are connected.
