Im on MacBook Pro 2016 late model(Catalina) I run animation adobe programs etc.

Historically, anytime we did an update on Mac it ruined the Adobe programs and we'd have to go install new copies.

So forgive me being hesitant. to upgrade.

Also my Mac is starting to get hot recently I've noticed, so was thinking would a fresh installation of an operating system, sort of help clear it. up?

Do my fans need cleaning maybe..

Or is the accumulation of files. over the years also slow it down?

I typically do a fresh install for each major OS release. I didn’t for big sur, just did an upgrade (hoping to save time). So far I’ve seen no issues, but I also don’t use Adobe apps so YMMV.
 
I have a late 2018 MBP and upgraded to Big Sur in February this year. I use Photoshop and Lightroom without experiencing any issue. Generally speaking, Adobe products tends to be incompatible with the first release of new MacOS but within few weeks provide updated versions. As newly released MacOS version tends to be buggy, I always wait for 2nd or 3rd version of an OS before upgrading. I never tried to do fresh upgrade because I am too scared to get a brick as a result of it (T2 chip mac fresh upgrade seems to be causing issues and is not well documented to me).
 
If you're worried about it I'd do a fresh install. Generally that makes a big difference. Cleaning the fans and the insides also never hurts. A fresh coating of thermal paste (if you feel comfortable with it) also makes a world of difference
 
Cheers, you mean fresh install of Catalina?
You can do a fresh install of Catalina or Big Sur. With such a big upgrade I'd probably do a fresh install of Big Sur. If you have the ability, give it a nice clean on the inside too, I'm sure it'll thank you :)
 
Bought new Mac with Catalina and then installed Big Sur as update. My Mac periodically ran like crap. Just today did full wipe and fresh reinstall. Apple no longer gave me the option of installing Catalina. I only saw Big Sur after wiping drive. So far seems ok
