Upgrade to S5

So I will be upgrading from my S4 to the new S5. My question is how do I save what's on the S4 and transfer it to the S5

When you unpair it automatically create a backup

Note well, health data, if you have a lot of it can take some considerable time to come back to the watch and appears in previous releases to only trickle down during charging whilst on Wifi. I assured somebody on another site that it would eventually come back and they didn't believe me until 2 weeks later it finally all appeared.
