I haven't been updating my iOS because the last rumor I heard was some glitched update that affected losing photos. I'm in a situation where I feel I need to update now because Discover cards only work with Apple Pay on iOS 9 or later. If I make this huge jump in updates, will all the preceding updates be taken into account (8.1.2 all the way to iOS 9) or will I just have iOS 9.1? Are there any problems with iOS 9.1 on the iPhone 6+ such as losing photos?

Updates are cumulative meaning you will have "all of them". Also, back up your photos so if you do lose them from the phone you can put them back from a restore or copy.

Do an encrypted iTunes backup before the update and you'll be fine.

Do exactly what the poster above said. When you do an update through iTunes, it downloads the entire OS, so it won't matter if you're on iOS 9.0 or iOS 6. Through the update tab in settings, it downloads as much as it needs to. Either way, you only have to do 1 update total.
