I have received multiple security updates on my 2016 iPhone SE last year. I think you’re all good for at least two years after upgrades aren’t available anymore.
That SE is running iOS 15 and we’re on 18, so even three years aren’t out of question.

Honestly, from a security perspective, you'd even want the upgrades. The moment Apple releases a security update (meaning, for example, that your device is stuck on iOS 17.x.x and get an update for iOS 17.x.x+1, while everybody else is on iOS 18), they're doing that because there is a serious security issue that needs addressing as soon as possible. Usually because there's one or more security flaws that are actively being exploited on a wider scale.

You still, however, miss out on security updates which are less severe (but that can still be very important!) which only get fixed and pushed through in the most recent iOS versions.
