Upgrading Macbook Harddrive: How to transfer data?

I have a 120gb HD in the mail for my Macbook, as well as a 2.5" External USB 2.0 enclosure for the old 60gb drive. Assuming this is all I have to work with, what is the easiest and most effective way to transfer all my data and get up and running again?

Stick the 120GB in the enclosure, clone your 60GB to the 120GB disk, then put the 120GB disk in the Macbook et voila.
