What is the best way to upgrade my main HDD? It's the 160gb stock drive. Can I do this and still somehow keep all of my docs that are on the stock drive?

Yes. Just buy an external SATA enclosure, install the new drive, connect the old drive to the enclosure, and use Carbon Copy Cloner to copy the OS directly from old drive to new.
