The OP is understandably excited about getting an iPhone X sooner than expected, hasn't purchased this way before, and is seeking guidance to ensure that all the ducks are in a row. Four weeks ago this morning I was in the same situation, waiting for my appointment to pick up mine.

I did a little poking around with searching, and of course I've found basic information, but still want to ask the experts here:

Got lucky and caught an X in stock at my apple store early this am. Picking it up in a couple hours. This is the first time I've ordered a phone online for pickup, and first time getting from Apple store. Always just gone to AT&T.

This is also the first time I'm KEEPING my old phone (7+), at least for now. I chose "activate later" to save time in checkout because I was concerned I wouldn't get the phone. I was planning on having the store activate the phone as though I had made that choice when I get there (as AT&T does if they can).

I plan to restore from backup. Other than backing up my 7+, and taking my Speck Presidio Sport case WITH me to the store, is there anything else I should do before going to the store or before interacting with the new phone?

Edited to add: I have an apple watch (two actually, including S3 LTE). I've asked in another thread about that consideration and was told unpair and repair and the carrier activation part should be smooth. Any further tips appreciated.

Make sure there’s no dust under the rear camera lens. And make sure everything else looks good like the seal where glass meets the body.

Don’t restore from backup. People have had problems with that. Start it off clean and you’ll probably have a much smoother experience.
I restored from backup and it’s working good. If you don’t restore you lose all your ****!!
 
I'd never ever unbox and setup at the Apple Store. It's something that's much convenient and enjoyable to do at home.
Basically you want to do the following (or at least this is what I did every time I got a new iPhone):
1. Update your 7+ to newest iOS
2. Unpair your Apple Watch
3. Connect your 7+ to iTunes and make a backup (don't forget to encrypt, to keep the Health etc data)
4. Throw away the SIM card inside the iPhone X, take out the SIM card from your 7+ and put it in your iPhone X
5. Setup and activate your iPhone X as "new iPhone"
6. Update your iPhone X to newest iOS
7. Connect your iPhone X to iTunes and restore it from the 7+ backup that you made
8. Re-pair your Apple Watch
9. Done!

Thanks. All done through step 7. Popped the new SIM out of the new phone and took a pic of the # for AT&T. Took forever to get AT&T to activate on carrier from the Apple store. Now the phone is re-downloading a million apps. Looks good so far. True tone for me actually looks pretty good and changes as I move from under workbench fluorescent into house under skylight over kitchen island. No dust under camera apparently. I took a Speck Presidio Sport case with me to Apple Store and moved phone right from box to case. Then had to take it out for SIM, and back to case....

Will work on re-pairing watches in a day or two once all apps have downloaded.......😎

I could just as easily say “I never got any dust under my camera lens. QC is not the consumer’s job.”

Yep, was only indicating my first impressions after someone noted I should check that on my unit in the store....

Look at the Note 8 before you commit. Everything the X has (sans 3d face id), plus more.

I've looked at them. Nice device. But not integrated into my ecosystem with multiple Macs, two Apple watches, Health data being tracked, etc.
 
Did you throw a pre iPhone party? That is a big no no , must throw an enormous party before getting the iPhone.

Damn, see, this is late. I didn't know. Probably jinxed the whole thing.....now my phone is going to creak, dust will jump under the camera cover, my speaker will crackle, color will shift into a rainbow, my photos will all develop red eye retroactively, my cell signal will degrade inexplicably, and my dog will unlock with FaceID and order one of those puppy care packages.

I agree, and I missed the fun when I bought my last phone. I part-exchanged my 5S for the 6S so had no choice but to do it in the store, as they took my current phone off me there and then.

It took a while as I was running a beta iOS version so first had to set up the new phone "as new", then log in to iCloud, then register the device for betas (luckily it wasn't a dev beta I'd downloaded from some sharing website; I do that sometimes!), upgrade to the latest public beta and then finally reset and set up from my iCloud backup. Phew!

As an aside, all my data (including health) restored ok from the iCloud backup.

I went from a 128GB iPhone 7 with 80 GB used to a 64 GB iPhone X with no problem because 50 GB of that data on my iPhone 7 was photos and I use iCloud Photo Library. All my photos came over to my new phone... as thumbnails. This is fine by me. I've had my phone since 11/20 now and as of today 35.6 GB of 64 GB is used. I did not bring all my apps back. I decided to let a lot of them sit in the cloud until I need them. Others I deleted altogether because I grew tired of their frequent updates and I was not really using them. Everything I care about came over just fine.

It's been a very long time since I did a sync or a backup using USB. I prefer my contacts and calendar to show up on any new device I activate. When I got my first iThing in 2009, an iPod Touch, all my contacts and calendar magically showed up through dot mac (or whatever it was called back then) before I left the Apple store.

Luckily my dogs can't use FaceID or I'd be living on a farm full of rabbits for them to chase.

Basically you want to do the following (or at least this is what I did every time I got a new iPhone):

I did my activation at home but I had AppleCare on the phone while I went through it. I was concerned that I was cramming 80 GB of stuff into 64 GB of storage and things wouldn't go well. My concerns were unfounded. Everything went very well. Rather than reading through lists of steps on forums like this, I liked having somebody on a voice call I could ask questions in real time as things occurred to me. To me this was better than a Genius Bar appointment because in the store they tend to be under pressure because of the long lines of people wanting help. I've read quite a few posts on here about people experiencing data loss because the Genius Bar tech did something rash during an appointment! Typically they say something like, "I'm going to go ahead and wipe everything to save time. You've got it all backed up somewhere, right?"

On the phone, the guy stayed with me for about an hour until I had the new phone properly signed in, working on Verizon's network for making and receiving calls, and the restoration of my stuff from iCloud and the App store had started in earnest.

I didn't wipe my iPhone 7 to turn back in until everything successfully showed up fully working on my iPhone X. This was about 4 hours later over wifi.
