Hi I am currently on holiday in the USA and am looking to buy a Series 5 Watch. Im looking to buy the GPS version so non cellular, will this work fine back home in the UK, obviously apart from the charger brick?

It'll work fine.
The cellular model might still be of interest, even if you don't plan to activate it (or can't due to country differences) as fall detection and emergency alerts are supported worldwide with Series 5, and activation is not required.
