Hi Guys
My iMac is late 2012
Going to buy a 4 Bay enclosure (HDD dock)

It comes in USB 3 and USB C
Should I just get the USB C model and use an adapter cable for future proofing?

It doesn't really matter. Unless the USB C model offers USB SS 10. If it's just 5Gbps. Then there is no advantage.

Otherwise it's just a different connector requiring a cheap adapter cable.

I may upgrade in the new year and I was think that a USB C connection on the enclosure would be the best choice
as all the new Apple devices have gone in that direction
 
There are USB-A ports that can do 10 Gbps.

The four bay enclosure will have a USB-B connector or a USB-C connector. You can get USB-A to USB-B and USB-C to USB-B and USB-A to USB-C and USB-C to USB-C. It's all the same up to 10 Gbps (if the cable quality is good enough for 10 Gbps).

I'll go the USB - B connector seeing that i'm able to get connecting cables to do the job,
At least I'll be able to use it on a New iMac Pro I guess

Just make sure it's the USB 3.x variety of USB-B: Type B SuperSpeed or Micro-B SuperSpeed, which should all be capable of 10 Gbps.

Let us know what enclosure you decide on.

If you are looking at the Probox, e.g. HF7-SU31C, this is USB3.1 with type C and supports 10Gbps, where the standad USB3.0 units with type B support 6Gbps. So there is an improvement on the interface, noticable only when using SSDs. Using standard HDDs, it is same slow. Using HDDs (which is likely due to size), you can save your money and go for USB3.0. Even in 5 years the interface won't be faster.
So I'd say if you want to go for SSD, go for USB3.1 interface (or 3.2 if available), which will typically be type C.
Most importantly, check the specs of the box!

If an "upgrade is in your future", get USBc.

Preferably, you would want USB3.1 gen2 (which runs 2x as fast as plain-vanilla USB3).

It will work now, and it should work even better when you move up to a new Mac.
Just use the appropriate connecting cable.
