I'm thinking about getting an ethernet adaptor to plug-in into my Blackmagic eGPU, so I can have a wired connection when in my office. However I'm unsure if the eGPU have anough bandwidth to not throttle the connenction? I have about 400mbit on wifi on a 1gbit connection.
 
It wouldn't throttle the connection. The connection between your eGPU and Mac is Thunderbolt 3, which is a 40Gbps connection.

The more likely weak link will be the Ethernet adapter. Just make sure it's rated for gigabit speeds and you'll be fine.
 
Unless you are 100% saturating download and upload as well as full load on the gpu at the same time consistently, I just can not see gigabit ethernet having that much of an impact.
