I have the Mini 5. When the day comes to upgrade I see that the Mini 6 lacks a headphone and lightning port and there are no USB-C headphones that apple makes at this time, meaning I am limited just to AirPods? I use my AirPods most of the time, but sometimes I use my lightning headphones. Is this correct?
 
There is an adapter so you can use your headphones with the USB C port.

I hope by the iPad Mini 7 Apple will have produced a native USB C headphone product. BUT perhaps not since most use AirPods. If the iPhone goes all USB C they better.
 
You don't have to buy AirPods because it will work with any Bluetooth headphones. There's no brand lock in when it comes to headphones.
 
There are USB-C earbuds available, just not from Apple, if you want corded ones, but I posted the Apple brand adapter in case you have corded ones you like that have the regular headphone adapter plug. I use one with my Bose noise cancelling ear buds.

No I have not yet updated and probably wont for a while. So at the moment my iPad Mini 5 works just fine for me.
