What would be a good USB Hub to get for an M1 Mac Mini. That way I could expand from the current 2 ports available. Thank you very much.

Qwiizlab USB C Hub, 2.5 HDD & M.2 SSD Dual Enclosure

I just got one of these .... so far it is working fine (there are some SSD speed limitations when used with the M1, but it is still plenty fast for my usage.)

As nice as this is the USB ports are still limited to the Gen 1 speeds (5Gb). I'm waiting for a under $100 USB Gen 2 (10Gb) hub.

Yeah ... me too, but at this time this was the best I found.

To be fair however, two of the ports are 10Gbps speed, one Type A and one Type C. The other 2 ports are USB 3.0 @ 5Gbps.

Looking at those "under the Mini" hubs, I'm wondering how they impact airflow "up from" the bottom of the Mini...?

This 6-port powered USB 3.0 hub with SD card reader worked well with my M1 Mini. The USB-C connection to the Mini was a huge plus. Quality and price were very good.

Depends on your needs.

I have a USB-C to four USB-A device that works well for hooking up my Time Machine disks. I also use a port hub in my monitor which has four or five ports for keyboard, mouse and lightning cable. These are just for more USB-A ports and they are nothing fancy.

I bought this one and it expanded my Mini from two ports to seven. I may get a 2nd one if I can figure out a way to plug it in.(I have a lot of equipment plugged in near my computers)

Yeah, I find this is a surprisingly good powered hub for the money. You can connect it to your Mini either via USB-A port or Thunderbolt (USB-C) port. It comes with both cables. I may buy as second one too, for my older 2012 Mac Mini.

Hmmm. I've never thought of this before, so I haven't looked into it. Will a hub work for other devices if it is plugged in to another hub?

According to the manufacturer, you can. It seems the key to hub daisy chaining is that each hub should be powered and not draw power from the computer.
