Use iPhone as iPod touch temporarly?

I really want an iPhone. So I was wondering if I could buy the iPhone, say tommorrow then unlock it and use it as an iPod Touch until I get enough money to buy a T Mobile data plan.

Is this possible?
WiFi will still work?
No data services will work right?

Are there any caution I should be aware of before I do this?

Do it. That's how I've been using mine since Day One (because we're still on Verizon). Everything works, but only on Wi-Fi.

To that I say, "Gimme your SIM." I proceed to pop their SIM in and call one of their friends.

*joke* If they're jerks about it, I open webpages and check the weather/stocks before giving it back. *joke* No one around here has a data plan.

Put it in dead mode (or whatever yall call it)
connect it to the pc
run ZiPhone

Which options do I check for ZiPhone?
