iPhone 12 mini Use remote app via bluetooth

I am successfully using my iPhone to control music on my mac mini using the remote app.

Is it possible to do the same thing using bluetooth? I need the system to work in a venue that has no wifi.
 
Another thought is that I could set-up an ad-hoc wifi network, would that work? Seems difficult in Sonoma.
