Hello, I have a quick question...I'm interested in buying a used macbook pro from a local and wanted to know if I could purchase Applecare for it even though I and the person I am buying it from do not have a receipt for the laptop? Is this still possible if it was bought less than a year ago?

Should be fine. As long as you have the serial number (which is on the computer itself), I think you should be fine.

You don't need the purchase receipt to buy/ extend the AppleCare. However, it will extend it from whatever Apple thinks is the purchase date. To ensure that it is still within the first year of warranty, have the owner enter in the serial number at Apple's support site at the very bottom of the page, here:
