Honestly, What worked best for me was:
Main display centered directly in front
Second display angled more aggressively for side tasks
MacBook either closed or off to the side.
Keeping the MBP open underneath plus two large displays felt like too many focal points. Great for flexibility, not great ergonomically.
 
Using a dual monitor setup with an UW (Kuycon P40K) as the main monitor facing straight up and an HP 732pk as a secondary on the side. It works great but is indeed not symmetrical but I am finding it very comfortable to use. Sure it's not Retina and I am considering making it a 3 monitor setup with a 6K but at the current prices... may wait a bit.
