I’m thinking of getting a Series 4 and I really don’t have any need for cellular on the watch and certainly want to avoid the hefty monthly fee from Verizon. What would the result be if I bought a cellular enabled watch and didn’t get it equipped with data? Would I still get notifications and everything through my paired phone? Would there be any serious functional limitations?
 
The watch work work the same way as a watch without cellular.

When you purchase a cellular watch you purchase a watch with cellular capabilities.
Cellular is not enabled.
The watch still operates the same way as a WiFi \ GPS model would work.
When the cell plan is set up, it simply allows you the freedom to leave your phone behind, use the cellular network to get your updates/notifications

Fantastic. Maybe this generation they'll have a non-cellular stainless model. Highly doubt it, but at least the cellular will work.
 
Nobody knows about the new version but I think the Series 3 cellular also has twice the on-board storage capacity so even if you don't use the cellular feature you get a little something for the extra cost.

Friends of mine work in a store.
They sell a lot of merchandise to people that have relatives in Brazil.
Many of them purchase the cellular model with the intention of never using the feature.
They get the cellular version for the ceramic backing and the extra storage.

I have 4 series 3 watches, edition, SS, SBSS and a Nike non-cellular.

I find the ceramic backing much more comfortable, especially in the heat.
