I would highly recommend the apogee duet as an audio interface:-

In my experience, music programs such as Logic, ProTools etc do not rely very much at all on CPU speed - it is RAM which limits me rather than anything else -so make sure you get plenty of it.

That said, any MBP should run the software you need excellently - even a macbook would probably be adequate if apple hadn't removed firewire.

Lakewood Church where I lead worship uses a PC to process several *hundred* tracks simultaneously (CD recordings, etc). They're using a custom built 16-core (4 quads) machine with 4 Gigs of RAM. I asked why they weren't using more and they said they "didn't need it. It's all CPU processing power". ??
 
Alesis MultiMix8 FireWire. I own this (check my signature) and have a FireWire 400 to 800 cable, so I can hook it up to my Unibody MBP. Works great with Logic - record multiple tracks, and I've used it as an actual mixer too for live gigs with output going to the PA System.
