If I were to buy a 7th Gen iPod Nano, could I use it (along with a lightning cable) to interface with the USB port in my 2013 (pre-Car Play) Chevy Camaro, and play my iTunes over the car's stereo system?

I have an iPhone 7 Plus which will work for that, but I'd like something that would fit better in the center console, where the USB port is housed, and stay in the (locked) car while I carry my phone with me.

I have a 7th Gen iPod Nano. The lightning port on the Nano is for charging it only (unlike your 7+). You might be able to send music from the headphone jack using an adapter to USB and then into your car stereo. The output from the Nano is strong enough to drive most low impedance headphones so it should work OK that way.
