Using an SSD for apps and OS but keep HDD in optibay for documents etc

Can I replace my current HDD inside my mac by an SSD where I have all my apps and OS on but put the HDD in an optibay put it in place of my DVD drive where I would then have my documents folder?

There are like a hundred threads on this and a faq is here too. Not the best one but still.
You put your documents wherever you want. Most people only move specific folders like movies and music and leave the rest.

I have only music and movies on my HDD, the rest is on my SSD.

I don't know if you can do it, but many others here on the forum do it.

And I know that there have been countless threads but there isn't a single one which is actually straightforward.

For just OS and about 19gb of apps is 32gb SSD enough? Or do I need a 64gb?
