I've been cloning both my OS X and Windows partitions for some time, with Carbon Copy Cloner and WinClone, respectively.

I'm currently on a late 2008 MBP and plan to buy the (probably) upcoming MBP.

I know that at least on the Windows side, the drivers installed by Bootcamp are very specific - I don't know how hardware optimized OS X is. Will I run into problems when I try to clone the OS X and Windows partitions to the new HD? Or can I just carry on using them without any OS reinstalls?

For Mac OS X, you can clone it right over in most cases. Basically, you can clone Mac OS X to a new machine as long as the source OS version and build number is equal to or greater then the original shipping version for that machine.

Windows via Boot Camp can only be done across the same model without driver problems.
