I understand how it works but I am confused on specifically this.. if I am traveling abroad and want to use my number for everything except data, can my eSim be used just for that? Can I do everything I normally do with my phone but data doesn't go over my US plan but goes over my "abroad" plan for data instead but using my US number? It's not that clear.

This is what Apple says on their page:

"Use Secondary for cellular data only: You might want to select this option if you're traveling internationally and you want to keep Primary for voice, SMS, iMessage, and FaceTime. This will allow you to use Secondary for data."
