Hey. Me and some friends do a podcast from time to time and I record my audio with a Blue Microphone Yeti via USB.

However, I have thought about using my ipad with a USB hub and and adapter instead.
Are there any problems with this arrangement? What are your opinions or experiences with this solution vs using a MacBook?

It depend on which connector your iPad has, 30 pin or the lightning connector. There are Apple adapters for both. You also need to make sure that your USB microphone is compatible with these connections. There are plenty of audio recording apps for the iPad including GarageBand for iOS. Then it shouldn't be a problem getting you podcast audio file to the cloud.
