I have an iPhone 6S+, using iOS12.4.1. I also have an iPod mini that i plug it my car (using a 3.5 male adapter) so i can listen to music. But i was wondering if its possible to use my iPhone for listening to music, just like i did with the iPod mini?

Plug the 3.5mm plug into the headphone jack of the 6S+ to play what's on the phone in the car just like your mini. Do you have an iTunes library on your iMac?
Yes, on my iMac I have the basic song collection, from where I sync the iPod mini, but I don’t want to sync everything/all the songs I have on my phone because I don’t want to use all of its space. How can I sync only selected songs?

Am I missing something here? The 6s+ HAS a headphone jack same as the iPod mini does. You don't need any adapter(s) it will work the same way as the iPod does. Sync whatever songs you want onto your iPhone and you're all set.

The same way you do the iPod.
You can sync only checked songs or create special playlists for syncing. I prefer using playlists so I don't have to go through scads of songs looking for checkmarks. The link provides both methods.
