We have just had some surveillance cameras installed, which link up to a recording unit. It didn't come with a monitor, I was either going to purchase one separately or try and use my MBP as a monitor if possible. It has an HDMI port on the recording unit. Can I connect that to my MBP?

That HDMI on the MacBook is video out only. There is no video in input on a MacBook.

Is that HDMI Out, or in? If Out, would HDMI to USB/Thunderbolt work?

Nope. I'd buy a small & cheap monitor for this. No high quality needed and they cost nothing these days.
