Once my new iMac arrives I’d like to use my old one to paint from. I’m an artist and I’d like to have my references on the screen and paint from that. Can I keep Photos only on that machine and clean everything else out of it? Thanks!

You could perform a fresh install from the original disk(s) if available - don't do any updates as they won't be necessary for displaying photos.
Go into preferences and make sure screensaver, display sleep and computer sleep are turned off.
Double click on your reference image and press shift+cmd+f - this will display the image fullscreen.
