how do i set my computer so that if my computer goes to sleep or if the screen saver goes on for awhile (basically when i'm away from my computer) I have to enter my password in order to get to my desktop, rather than just moving the mouse and BAM i'm at the desktop

In Security (or Accounts) is the option to Require Password after sleep or screensaver.

I would also suggest opening up the Keychain Access application and changing it's preferences to show the status on the menubar. Then you can lock the screen anytime by using the menu.

Or you can just set up a hot corner to activate the screen saver.
