I've never used any video editing software (still images is my thing), but this does look very impressive. I imagine this will cut down time on some jobs conciderably.

What do people do now, when say they want to cut out a single element out of every frame - like they did with the parking sign in the video?

You would have to mask out the parking sign, try to use motion tracking to make it follow the sign, then if you're able to stitch together the flowers that are obscured by the sign, put that in and track it to the scene as well.

Similar to the steps demonstrated by the video, but more "manual" as it would probably require frame-by-frame tweaking and this seems much more automatic.

So probably as much render time, just less manual labour.
