How easy would this be? I just want to change default settings when new devices are connected, like all the checkboxes involving the syncing and whatnot.

Why? I maintain iDevices daily, and would like to speed up the process and/or reduce the chances of screw ups.

    Thanks in advance.

I'm not sure the app has those things exposed to externally to make those changes. That is I don't think apple has made it that customizable outside of iTunes.

Sync settings are saved on the device. In order to change the default, you would have to hack into Apple's factory.

    Please don't do that.

You can perform device management and deployment through Lion Server tools if that is what you are looking for. You can set up a pre-determined profile to export to the devices. It is designed for enterprise where many devices need to be maintained and provisioned.
