I made my iCloud subscription and i wish to start using it to store photos and videos. How do i do that?

Not difficult to unsubscribe, just know you can only quit at the next interval - so you won't get a refund if you signed up Oct 1 and quit Oct 4. You'll have the service till Nov 1 and then it will not renew.
Very easy to unsubscribe especially on iOS 16.

Assuming you're using an iPhone? Just toggle on iCloud for everything you want to toggle and it will very slowly upload - when you're plugged in.

So if you signed up for a year, the only thing you can do is not renew for the next renewal period. You can stop the automatic renewal.

Settings --> Apple ID at top --> iCloud --> Apps using iCloud - make sure all those are turned on. Same for Mac.

Settings —> Apple ID at top —> Subscriptions. Should be here. Mine shows up as Apple One because I bundle it with other services.
