I'm getting a new multitouch MBP today and I was planning to wipe the install and use my Leopard DVD on it to make sure I have none of the huge printer drivers taking up space. If I use the regular DVD how would the multitouch prefs work? Would I just need to run Software Update or something for them to show up?

Your MBP comes with restore discs in the box. You can use those to do a fresh install. That way you don't have to worry about anything like that.
 
That's a lot of effort for saving a few gigs at most.

Also, don't ever try to use a retail version of OS X that is a lesser version than what your machine came with - you will experience issues.
