I have had my trusty Edge powered original iphone for about 3 years now and it looks to be time to upgrade at last. I am hoping to use the original as an ipod touch around the house for quick web browsing via wifi and for ipod type stuff so I can give the iphone a break when I get home. Will my original iPhone work as an ipod touch once it no longer is connected to a service plan? Will I still be able to sync it up?

I read that article previously but it seems to have some conflicting info in the comments section. Has anybody successfully done this to an old Iphone that can comment?

Yup.
For me that's actually one of the cool things about going from a 3GS to iPhone4

I'll be using the old one for a cool Car System with the Navigon App and iTunes integated into my stereo.

Not sure how its all goint to work yet.

But It's cool 🙂
