I was trying to install Paragon NTFS for MAC, which was relatively easy in the previous OS.

It seems like it is way more difficult in Tahoe.

Apparently, I can not make the adjustment in the system settings, I have to boot into the Recovery Environment?

Does anybody have any experience with this? Or tips? It just seems like an extraordinarily difficult way to do something that until recently was relatively simple.

This is perfectly legitimate. It's a matter of opening up the security settings to install kernel extensions. If you know what you're about to install, and you trust the developer, it's totally OK. You can always reverse the process to re-enable this part of the security policy, after the kext is installed.
