I recently had my screen repaired on my M1 MBP at the Apple Store. They wipe the computer for this but I was told when I recover my backup I would be on the previous OS. When I did the restore it updated to the current one. How do I use Time Machine to load the exact copy? I really don’t like this new os and just want my computer to be the same as it was. Thanks
 
You'll need to erase the Mac and install the desired version of macOS first. Then use Migration Assistant to migrate the backup from Time Machine (the TM backup must be on the version, or an older version of what you want to run).

Easiest way to install a prior version is a bootable USB installer which you can create prior to erasing.

Time Machine doesn't back up the operating system. That's why you have to do what FreakinEurekan explained above.
Install the OS you want, then add the data from your backup using Migration Assistant.
