When the new os (V.3.0) Is released in a week or so will it be unlock/jailbreakable? If im already unlocked it seems best not to update...Yet

every other firmware has been jailbroken and every phone unlockable. 3.0 beta is already jailbroken.
It really depends on the hardware. The reason the current JB is so easy to do from current firmware updates is because it is a hardware exploit.
If the Apple fixes the hardware exploit in the new phone, JB may very well become very difficult if not impossible. It may end up like the PSP, jailbreaks from even minor updates will take months to get.
