Has anyone been able to figure out if the Verizon version of the iPhone 6s will come unlocked from the factory for GSM? I am currently living in Europe and I'm hoping I can just pop my Orange Sim inside and I can get it working.

Yes, this is been covered extensively. The Verizon iPhone 6S and 6S plus are factory unlocked per the FCC's regulations when Verizon bought the airspace. This goes all the way back to the Verizon iPhone 5.

any idea why when I just landed in Hong Kong my VZN i6s now requires activation, won't complete activation, and says SIM NOT ACTIVE? Is activation and locking the same? I thought at least if the phone wasn't unlocked, it'd still work normal. without the activation, i can't use my phone.

If you put another carriers sim inside it will take you to the activation screen.
And then you can activate with any GSM sim. Not sure why your having probs. All Verizon iPhone 6 and 6s are GSM unlocked.
