The tech specs on the new iMac page list (in the text) a Mini DisplayPort that supports DVI, VGA, and dual-link DVI. The photo of the back of the iMac shows only - headphone, SD card slot, USB3, Thunderbolt and Ethernet ports. No Mini DisplayPort (and no HDMI , like the Mac Mini).
Are you supposed to use one of the Thunderbolt ports (with adapter) for video out? And does Thunderbolt support HDMI? (I guess I could just look that info up.)

Yes, you use the Thunderbolt with any of the available MDP to VGA, DVI or HDMI adapters.
To learn more about Thunderbolt (TB) and its compatibility with Mini DisplayPort (MDP):
And because Thunderbolt is based on DisplayPort technology, the video standard for high-resolution displays, any Mini DisplayPort display plugs right into the Thunderbolt port. To connect a DisplayPort, DVI, HDMI, or VGA display, just use an existing adapter.
