Have you tried Air Video or VLC Streamer? Even the free version will do!
Both of these will convert your videos (you don't HAVE to do it live over wifi), and I found both of them faster than Handbrake ..... you can control them with your iPad as well...
They were easy to use and since they're for the ipad, the settings were quality as well....
