Is MacFort pretty secure or could someone knowledgable get in? Is there anything more secure?

What's the best disk encryption software for a Mac? Is there anything that can be used to encrypt a hard drive so that even when it is taken out of a computer nobody can access the data on it?

Maybe.....

PGP Desktop (now made by Symantec) it is worth. You can either buy the full product or use in demo mode. Can also erase securely files pretty fast.....:D

FileVault 2, built in since Lion. With modern hardware it's basically seamless; current Intel CPUs have AES acceleration in hardware, so there's next to no CPU overhead and it's fast enough that it doesn't cause slowdowns even on speedy SSDs.

I second FileVault2 if you want to go for full disk encryption. It works well, easy to setup, is built in and free to use.

If you don't want full disk encryption, you can use an encrypted disk image which you can create in Disk Utility.
Apple has instructions on how to do this here http://support.apple.com/kb/HT1578.
