Ever since I updated two XS Max phones to iOS 14, I have noticed that one of my two watches is paired to both phones. I know this because the second phone is also showing the exercise and steps count although it is delayed just a bit. If I go into the watch app on the second phone, it wants me to update the firmware on the watch. If I say no, it will reset the watch and it is actually not reset, it just no longer works with the real phone that I have it paired with and I have to reset it. When I repair the watch, it is again paired with both phones.

The "real" phone was purchased almost two years ago and the second phone was purchased a year ago in April but I didn't start using it until two months ago and it was restored using the first phones backup.

Anyone have any ideas on how I can stop this short of restoring one phone and starting it new?

You are going to have to unpair the watch and set up both devices as new. That should allow you to have correct pairing on the phone you want the watch on.
