When I sleep with Apple Watch on the wrist while in train through the night, the watch detects sleep but does not detect sleep stages. It detects sleep stages without any problem when I am sleeping at home. Why does it not detect sleep stages while in train through the night.

So what exactly does it show? Can you post a pic/screenshot?
And it sounds like your watch is functioning properly so I would guess it has to do with a moving train causing body movement that you seem to oppress as you do sleep.
But this might be more of a question for Apple support

And what is your watch model/OS version?
 
Maybe because you appear to be in motion all the night, rather than in the same location all night such as sleeping at your home.

I’m sure it’s due to the motion of the train, causing the watch to not be able to detect sleep stages properly.

Is it something Apple engineers could account for? Maybe. But it’s a pretty limited user base so probably not worth the effort.
