Ok guys, here’s what finally worked for me: Go to Settings -> General on both the settings app and the watch app, then delete any beta profiles, restart both devices, and you should be good to go.

Where in settings. Mine just says I am on IOS 11 on my phone & OS 3.2.3 on my watch. I was using the betas though before 11.
 
Try rebooting the phone. This was the only way I was able to get the update to finally load up after I hit the Apple Watch icon. I have an original Apple Watch..pushing 90 minutes into installing the update. Ugh!!
 
Followed steps above, removing the beta profiles on the iPhone for both the iPhone and the watch, rebooted both devices, and the WatchOS 4.0 finally showed up. The profiles were found at the end of the General settings on the phone and under General settings in the Watch app. Thanks Dick Whitman
 
What's odd, is that I forgot about watchOS4 and only by going into my watch app did I realize it was out. I think my experience was the polar opposite, not realizing it was out but it was ready to download.
