After upgrading to WOS7, the option to unlock mac with the watch got unselected.
When I try to re-select it I get this message "Your Mac was unable to communicate with your Apple Watch."

Any clue as to what could be causing this?

I’d start with rebooting the watch and the Mac. It works fine with mine.

Nope. Just rebooted everything and the problem is still there.

S4 running WatchOS 7.0.1
MBP 13" early 2015 - running Mojave 10.14.6

This problem looks like a software bug that has carried over from the beta version. Some have had success with the different fixes in the following thread.

I had to re-pair my watch and the same problem occurred again, so this time I made a further discovery.
In the 'Security & Privacy' page, this time I first unlocked the page by clicking on the lock at the bottom of the page BEFORE ticking 'Allow your Apple Watch to unlock your Mac'.
While it would initially appear as if the 'lock' step is unnecessary, it made all of the difference to me and allowed me to make the other selection stick.
