Since I installed watchOS 7 (now 7.2 beta, I always keep it current but this was happening with 7.0 and 7.1 release versions so I decided to see if the Public Betas fixed it) on my Apple Watch Series 5 GPS + Cellular, I have noticed problems with cellular connectivity.

Every morning when I leave my house for my run, after I get out of range of my iPhone and my home WiFi, Siri tells me “Siri Not Available — Your Apple Watch is not connected to the Internet” if I ask it to do anything. When I check, the cellular indicator in Control Center is green, and I have anywhere from one to four dots depending on where I am. But, any music I am streaming will end after the songs that were presumably loaded at my house are done, it won’t load any more music that’s not already on the Watch, and as I wrote, Siri doesn’t respond.

To fix this, I try tapping on the Cellular indicator in Control Center, turn off Cellular for a minute or two or more, and then I turn it back on. This does not always work. Sometimes it takes multiple tries for it to work again, other times it works the first time, once in a while it doesn't work at all. Today, it took multiple tries to get it to work and it finally did. Half an hour later, I tried to send a message to my wife and Siri had trouble. When tried to get Siri to send her a message again, it told me Siri Not Available, and a few minutes later the music I was streaming stopped. Losing the connection while I was out after I had regained it was a first.

I unpaired and re-paired the Watch earlier this week in hopes of fixing this. I even went so far as to have it remove the cellular account and then add it again as part of the process. Since I still had the problems on the following days that clearly didn’t fix it.

When I check Cellular Status in Settings, it says No Connection.

When my wife and I go for a walk together, she brings her iPhone, I don’t bring mine. Several times during the walk, my Watch asks me if I want to join her Hotspot. It never did that before I was having this problem.

Right now, I’m sitting at home, I turned off WiFi on the Watch, and turned off my iPhone. The Cellular indicator is green and shows two dots. Siri Not Available.

Has anyone had this problem? I’ve searched for it online but haven’t found much. While it could be a hardware problem, I’m suspecting it’s watchOS 7. However, if it is, it doesn’t seem to be affecting many people or they haven’t noticed it.

Things I've tried include turning cellular on and off both with WiFi off and left on, unpairing and re-pairing the Watch, removing and adding the cellular account, and resetting network connections by going into iPhone > Settings > General > Reset > Reset Network Settings while also force restarting the Watch (hold Digital Crown and side button for ten seconds until the Apple logo appears). There was one thread on here about something similar but none of that helped me (and at the moment I can't find it).
 
Update: The cellular connection works in that my wife was able to call me while I had only my Watch, yet I couldn't connect to the Internet otherwise as far as I could find.
 
I can also make calls using the Phone app, just not with Siri since she requires an Internet connection.

Am I really the only person with this issue? Maybe Apple needs to send me (yet another) Watch. 😕

It looks like you have tried about everything you can. I suggest you contact Apple and see if they can assist you further in getting it to work, or do repair / exchange.
 
This probably wont help you with the problem itself but just to troubleshoot some further have you tried disabling Bluetooth on the Watch in addition to disabling Wi-Fi ? Just to see if it makes any difference.

Like Apple_Robert said contact Apple support. They can send you logging profile (you can get it yourself too but need developer account afaik) and get more information to get to the root cause as it could be a number of things from hw fault to software issue to cell provider problems or cell provider cellular settings update. More likely a software or cell settings problem tho as your Watch can still receive calls you say.

Finally someone else having literally the exact same problem! My problem is down to point by point the exact same problem you are having. I have also tried all of the stuff you have done from reloading the phone and watch and setting up both as new and with the latest iOS and watchOS upload and nothing has fixed the problem with the exception that randomly sometimes it will work correctly until the next time when it won’t work. It has been maddening. I am using series 5 but my wife’s series 4 is having identical problems as well and I have reloaded her watch and phone and setup as new a couple of times with latest iOS and watchOS updates and agains does not fix the problem with the exception of it working randomly for before not working again. This all started with iOS 14 (don’t know which version) and watchOS 7 (don’t know which version). 13 and 6 didn’t have these issues. It has been driving me nuts. I’m wondering if the reason why most people seem to be unaware of this is because maybe nearly everyone has their phone with them and close to their watch so the issues has gone unnoticed. Either that or it’s a highly isolated problem, but I can’t seem to find a connect as to what could be causing it though. Have you made any progress on this problem?
 
Add me to the list of people with this exact same issue. I got my AW6 on launch day and everything was fine for a couple of months, then at the end of Nov, On my daily run, exact same as @Joe Mac User - "No Connection" even though showing dots. Calls work, but nothing with data. Have to toggle cellular off/on a few times to get it back. Seem to always come back when I am a certain distance from my house (about 1 mi), so I thought it was a tower issue.
