I don't really know the word to describe this but does anyone know what this might be? It doesn't happen all of the time. When it does happen it's normally zooming it on google maps and that colorly blocky pixelated crap is on it for a second then it shows the actual map.

It's on my 2010 15" i7 macbook pro in my signature.

As i said it doesn't happen all of the time, restarting usually fixes it.

Edit:

Also switching to nvidea doesn't make any change. The above picture is on intel.

Since it happens with both the Intel and NVIDIA GPU's, it seems like it could b an OS X software issue. Does the pixelated icons or distortions happen anywhere else?

Well it happens not often enough to know for sure. When it happened above that was the only folder. But it has happened with desktop items also. Maybe once a week this happens.

What I would do is try the Apple Hardware Test and see if anything gets flagged. If the test shows everything is fine, I would try a reinstall.
