I'm looking at the finder folder and noticed a shared folder named after me. Example with the name John Appleseed, the folder looks like this..."Johnappleseedc6b5"

I was reading online that people can view your iTunes content and access your Mac folders (documents, ect) VIA bonjour.

I have no clue if this is going on. I'm on a University WPA2 secured WiFi network running a VPN. I unchecked every option in "Sharing" which is found in settings.

I'm I good or not?

It's not clear (at least to me) what you mean by "Finder folder". I'm assuming you're seeing the folder in the sidebar down the left side of all Finder windows, but is it in the "Devices" section, the "Shared" section, or the "Places" section?

Regardless, if you've unchecked everything in the sharing preference pane, you're probably fine.
