Specifically, the ":" and the ";".

Does anyone have a link to any of the non-QWERTY keyboard layouts that are accessible? I mean, I know there's a numbers screen (there has to be), but what else is on it?

Well seeing as it has iWork available, they could well have a symbol popover for such things
æ - hold down the letter A on the iphone
œ - hold down the letter O on the iPhone
ø - hold down the letter O on the iPhone
ç - hold down the letter C on the iPhone
å - Hold down the letter A on the iPhone

If you want the greek alphabet much - make yourself a note and copy paste? ;)

    So that leaves
    ¬,˚, ∆, Ω, , ∑, ™,® §, ©, ∞ ...
I'm sure someone can be resourceful enough to use something like pastebot, till an OS update...

    § by holding down &
Greek characters can be used by enabling the greek keyboard under settings.

Honestly this is nothing to worry about. I am sure Apple will expand the character set on the keyboard for the iPad

There are lots of options with all the other languages. Add a few and take a look at all the options.
