Hello, I just bought an iPad PRO 12.9 2017. I noticed that in addition to the "App Store" icon, there is also an "Apple Store" icon on the desktop. What are the differences between the two?

The App Store is where you go to buy apps, music, movies, etc for use on your iOS device (there's also a Mac App Store for Macintosh apps)... The Apple Store is an app that connects you to the items typically sold in the physical Apple store - hardware, add-ons, cases, charging devices, headphones, external speakers, etc.
 
App Store - purchase apps for ios. Can see past history of apps purchased and download them again if you have deleted them from your device.
Apple store - where you buy physical hardware
TV app - watch ITunes TV and films purchased. Plus watch anything you have signed up for like Netflix. You can also Purchase tv and movies from ITunes. Again you can stream or download content bought.
iTunes Store - purchase tv shows, movies, music (inc. music videos).

The Mac store is slightly different.
App Store - purchase apps for Mac OS
ITunes - as above
TV app - not available
Apple Store - only web based.

Haven’t got a Apple TV so cannot say what is available on TV OS..
